Recipe: gluten free, low sugar chocolate walnut cookies


Somewhere between a cookie and a chocolate brownie, these delicious cookies are dangerously addictive. Rich and decadent with cut through and crunch from the walnuts, these are gluten free and much lower in sugar than regular cookies. We do use some added sugar here in the form of coconut sugar which has a lower GI than cane sugar but you could substitute this for a plant based sweetener like erythritol if you wish.

Ingredients – makes 8 medium cookies

  • 115g sugar free chocolate (or the highest percentage cocoa you can find)
  • 15g unsalted butter
  • 1tsp vanilla extract
  • 23g gluten free plain flour
  • 1/4 tsp baking powder
  • 1/8 tsp sea salt
  • 1 large egg
  • 80g coconut sugar (or soft brown sugar)
  • 40g chopped walnuts

Method

  1. Gently melt the chocolate and butter in a bowl over a saucepan of simmering water.
  2. Mix the flour, baking powder and salt and put to one side.
  3. Whisk the eggs with an electric whisk for 5 minutes adding the coconut sugar a little at a time. The mix should triple in size. 
  4. Stir in the chocolate mixture, walnuts and vanilla, then sift in the flour mixture and stir until just combined.
  5. Refrigerate for at least half an hour to allow the mixture to firm up.
  6. Preheat the oven to 180c
  7. Cover a large baking sheet with parchment. Place rounded tablespoons of the mixture spaced three inches apart (they will spread out so its important to give them plenty of room).  
  8. Bake in the oven for 10 minutes until the cookies puff up but are still gooey in the middle. Allow to rest for five minutes then transfer to a cooling rack.
