Peanut Butter and Chocolate Popcorn Bars

This fun snack is something all the family can enjoy. With only five ingredients, it’s quick and simple to make and although it’s vegan, the chocolate, coconut oil and dates combine to give plenty of indulgence and the peanut butter adds crunch.

Makes 12 bars


100g Coconut oil

50g Popcorn kernels (or plain popcorn)

150g Chopped dates

100g Crunchy peanut butter

130g Dark chocolate (sugar free if desired)


  1. Cook the popcorn kernels as per the instructions on the packet.

  2. Line a baking tray (12 x 12”) with baking parchment.

  3. Soak the dates in boiling water. Leave for 5 minutes and then drain.

  4. Melt the chocolate over a bain marie.

  5. Whilst the chocolate is melting, in a separate pan, melt the butter and add the dates and blitz. Then add the peanut butter and stir.

  6. Take the mixture off the heat and add in the popcorn. Stir well until the popcorn is fully coated.

  7. Pour 80% of the melted chocolate over the tray and spread evenly. Then add the popcorn and level the top.

  8. Drizzle the remaining chocolate over the top of the popcorn mix.

  9. Place in the fridge to cool for at least 1 hour before cutting into bars.
